I'm picking away at my prot right now, although I know my Ret could use some work, That's a different matter.
To encourage laziness, could someone let me know the important numbers for things like def cap, hit/expertise, and any other important but simple thing(s) that come to mind? It would be a great help!

Def cap is 540....use a 9696 rotation, have 1 point in imp judgement. Hit/expertise is used for threat, so if you're having problems with threat, find ways to implement that into your gear without gimping your stam/armor. If you're not, then there's no need for extra hit/expertise. and when all else fails....
